Chai-Spiced Green Plantain-Kimchi Latkes

kimchi frittersRecipe for Olga's Original Chai-Spiced Green Plantain-Kimchi Latkes (Dairy Free, Gluten Free, Grain Free, Paleo Friendly)Ingredients:1. 2 medium green plantains, peeled and grated on a large hole side of a box grater2. 1 cup kimchi, drained and finely chopped3. 4 scallions, finely chopped4. 1/4 cup roughly chopped parsley5. 2 eggs, lightly beaten6. 1 tablespoon coconut flour7. 1 teaspoon baking powder8. Juice of 1/2 small lemon9. 1 teaspoon pink Himalayan salt1o. 1 teaspoon onion powder11. 1/2 to 3/4 teaspoon Authentic Chai Masala spice blend, to taste12. Pinch of ground turmeric13. Ghee, lard or naturally refined coconut oil, to shallow-fry14. Chili sauce, guacamole or plain coconut yogurt, to serveDirections:1. In a medium size bowl, mix together plantain, kimchi, scallions and parsley; set aside.2. In a separate medium size bowl, whisk together eggs, flour, baking powder and lemon juice to make a thin batter, then add in salt and spices. Add the plantain-kimchi mixture to batter and mix well; let stand 5 minutes.3. Heat about 1/4 cup of oil in skillet over medium heat. Fry spoonfuls of the latkes, flattening them a little with the back of the spoon. When they are golden brown, flip them over and fry on the other side, about 3-4 minutes per side. Keep warm while you cook the rest.4. Serve immediately with chili sauce, guacamole or plain coconut yogurt.Makes a baker's dozen or so
