"No Cheese" Cheesy Mushroom-Leek Soup

creamy mushroom soupRecipe for Olga's Original "No Cheese" Cheesy Mushroom-Leek Soup (Dairy Free, Gluten Free, Grain Free, Paleo Friendly)Ingredients:1. 3-4 tablespoons grass-fed ghee2.  2 whole leeks, white and light green parts only, sliced into thin rings, about 3 cups3. Pink Himalayan salt4. Freshly ground black pepper5. 1 lb. gourmet mushrooms, trimmed and thinly sliced6.  1 teaspoon onion powder7. 1 teaspoon Nom Nom Paleo Magic Mushroom Powder8. 1 tablespoon chopped fresh thyme9. 3 cups bone broth10. 1 cup water11. 2/3-3/4 cups nutritional yeast, to taste12. Non-dairy yogurt of choice, optionalDirections:1. In a large saucepan, heat the ghee over medium heat.2. Add the leeks, a pinch of salt and pepper and cook, stirring, until beginning to brown at the edges, 5-6 minutes.3. Add the mushrooms, onion powder, Magic Mushroom Powder, and thyme; increase the heat to medium high and cook, stirring, until the mushrooms soften and start to brown, 5-6 minutes.4. Add the broth and water; bring to a boil. Reduce the heat and simmer for 5 minutes. Remove from heat and let cool briefly.5. Using an immersion hand blender, purée the soup until smooth.6. Reheat and stir in the nutritional yeast until dissolved; adjust the seasoning if necessary.6. Serve with a swirl of non-dairy yogurt of choice and fresh thyme.Serves 6-8
